The Fish Goes Onto Paper, Too

A whole fish, inked and pressed onto paper. Watching artist Dwight Hwang demonstrate gyotaku over dinner might briefly distract you from the next course. That is what interests me about this evening at Park Hyatt Chicago. You come for the menu, then find yourself wondering what the fish will leave on the page.

On October 16 and 17 at 7:00 p.m., NoMI sets 18 seats each evening on the seventh floor. HERITAGE SERIES: Japanese Artistry is publicly ticketed at $540 per person, including a non-alcoholic pairing. The six-course omakase moves from wakame and crab leg in tosazu to tilefish steamed in a cherry-blossom leaf and nigiri, finishing with fruit and small sweets. An optional whisky pairing costs extra. The restaurant describes several component whiskies as unavailable to the public.

Through the floor-to-ceiling windows is the 1869 stone Water Tower; Lake Michigan lies two long blocks east. There is something to look at between courses, too. With a room upstairs, dinner can be the main reason for coming, followed by an elevator ride to bed. I usually start planning with the room. This time, the table can come first.

Book the View You Want

Before choosing a floor, decide what you want outside the window. Water Tower View King faces the tower. Lake View King looks toward the lake. If you already know the answer, book that category. A view you care about is a poor thing to leave to chance at arrival.

The entry City View King has window seating and a separate shower and tub. October afternoon light comes in at an angle. Leave yourself time to sit and watch Michigan Avenue rather than treating the room as somewhere to drop your bags.

Water Tower Park is across the street, Gold Coast dining is to the north, and the lake is a ten-minute walk east. Going out can be a decision made after breakfast.

Water Tower View King has the same floor area as the entry room; Lake View King adds space. Deluxe adds height but is smaller than the entry category. Those distinctions make the names easier to navigate. If the tower brought you here, keep the tower view. Moving up the room list is not automatically an improvement.

Let the Other Meals Be Casual

Dinner has an appointed hour. The other meals can be less structured. NoMI Kitchen serves breakfast daily and dinner Wednesday through Saturday. NoMI Lounge is next door, and the NoMI Garden terrace is another option when weather permits. You can leave a meal undecided and still have choices on the seventh floor.

The terrace generally stays open into mid-to-late October. On another visit that includes a Wednesday, Golden Hour offers a martini, a salmon avocado roll and truffle fries. It does not coincide with this dinner weekend. I can leave a menu partly unexplored.

The heated indoor pool downstairs and NoMI Spa give an unclaimed morning or afternoon somewhere to go. Beyond the formal dinner, keep a little room to decide how you feel that day.

Take to the River Before Dinner

October 15–18 puts a room around both event evenings. Buy a dinner ticket for whichever evening suits you and leave the other free. An October 14–17 stay means checking out at noon on October 17, seven hours before dinner. Your luggage would need another arrangement.

An architecture cruise fits the daytime well. Walk south along Michigan Avenue for 15 to 20 minutes. At the bridge’s southeast corner, take the stairs down to riverwalk level and board at 112 E Wacker Drive. Remember the stairs as well as the address. They are the useful part when you are looking for the dock.

The cruise lasts 90 minutes. Pick an afternoon departure that allows time to return to the hotel before dinner. The river supplies plenty of architecture; the day does not need more sightseeing squeezed around it.

Qualifying three-night stays also include architecture-cruise tickets. That suits someone already planning this length of visit. The tickets are an addition to the trip, not a reason to extend it.

October Needs a Dinner You Want

If neither gyotaku nor the menu catches your interest, leave Park Hyatt Chicago for December. On the dates I checked, the same City View King was $3,735.72 for three nights on October 15–18, compared with $2,876.54 for three nights on December 10–13. Coming in October for the event makes sense. Coming simply to stay at the hotel leaves the month open to discussion.

The advisor-only rate matched the public standard rate in these windows. Booking through Virtuoso includes daily full breakfast for two in the restaurant and a hotel credit. If breakfast here is already part of your plans, having it included at the same room rate is useful enough. I do not have to turn every dish into a calculation.

Flexible dates give a travel budget some freedom. Spend on the occasion you actually want to attend. You can also read the menu, consider the evening and decide that your visit belongs in winter.

Be Clear About Sleep

If you are sensitive to noise, say so. The hotel has triple-paned windows, yet some guests still report street noise. Requesting a room away from direct avenue frontage is a specific preference to pass along. Guest reports also describe limited pool depth, so plan on a soak and keep serious swimming expectations modest.

The Chicago Marathon is October 11. No entry rooms came back for October 9–12 when I checked. If the race is not bringing you to Chicago, avoid that window.

Reserve the Table, Then Arrange the Room

Buy your dinner ticket on the restaurant’s website. Booking a room does not reserve a seat. You can also come for Michigan Avenue shopping or a soak between meetings. The event is a reason to visit, not a requirement.

The cruise offer requires at least three nights in a City View King or above. Its stated window is “Book & Stay Through October 18, 2026,” with confirmation at least three days before arrival. For October 15–18, have the booking confirmed by October 12. Your advisor must book directly with the hotel’s luxury sales department. Tickets cannot be added to a public-site reservation afterward. The quoted room rates are refundable and non-prepaid, with cancellation permitted the day before arrival.

I’ll re-price your dates for your party and compare advisor, public and promotional rates. Before booking, I’ll pass along your tower or lake view, floor and avenue-facing preferences. I’ll make sure the confirmation spells out breakfast, the hotel credit, the cancellation deadline and whether prepayment is required.

That includes clarifying credit eligibility for the event dinner, how breakfast works on weekends, cruise-ticket inclusion and whether the offer covers the night of October 18. I’ll request and follow up on upgrades, early check-in and late check-out; all remain subject to availability. Before arrival, I’ll re-check restaurant, spa and facility availability.

Rates are live rate pulls from the booking system on 18 September 2026: one room, two adults, three nights, USD totals with taxes and surcharges included, on the refundable non-prepaid basis (cancellation deadline: one day before arrival). Windows are compared on the same entry City View King; for 9–12 October that category did not return, so only that window’s cheapest refundable room is shown. Room sizes and descriptions come from the room records returned in the same rate pull. The $177 breakfast and $277 amenity figures, and the $1,580 dinner for two, are arithmetic estimates from published menu prices, not quotes; NoMI breakfast prices, the $38 Golden Hour set and the $540 and $250 event prices are taken from the restaurant’s published menu page. The Virtuoso rate matched the public standard rate in every window checked; amenities are separate. HERITAGE SERIES is a publicly ticketed dining event, unrelated to any advisor channel. The cruise-ticket offer requires booking directly with the hotel, a three-night minimum, a City View King or above, and confirmation at least three days before arrival; terms are subject to the hotel’s written confirmation. Hotel size, refurbishment year, outlet hours, pool depth and noise observations come from the hotel’s own material and public guest reports as of September 2026. Photography courtesy of the hotel.
